Needed a post-run energy/protein boost. Tired of soy protein shakes. So added black beans, fire-roasted tomatoes, and corn to brown rice, spooned over a bed of romaine, and topped with sliced avocado.
Don’t tell me I can’t find a vegan breakfast at a greasy-spoon diner!
Super easy, super good summer meal: Happy Herbivore Black Bean & Salsa Soup with a southwest style salad (load up romaine with black beans, roasted corn, tomatoes, black olives, onion, avocado, and anything else that sounds good; toss with fresh lime juice, cilantro, and Tobasco).
